In a large bowl, mix the flour and salt together. Cut in the butter until the mixture resembles coarse crumbs.

Gradually add the water, stirring until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Peel, core, and slice the apples. In a large bowl, combine the apple slices, granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice. Toss to coat evenly.

Roll out one disc of dough on a floured surface to fit a 9-inch pie pan. Place the dough in the pie pan and fill with the apple mixture.
